1 cup canned black beans
1 cup diced peaches
2 tablespoons of minced red onion
1 tablespoon of minced cilantro
1 minced garlic clove
salt and pepper for taste.
OPTIONAL: diced tomatoes
Mix all above ingredients together in a medium sized bowl
serve with regular tortilla chips, or spoon into tortilla scoops!
